- 2 tsp extra virgin olive oil
- 450 g (1 lb) minced turkey
- 1 onion, finely chopped
- 2 celery sticks, finely chopped
- 1 red or yellow pepper, seeded and finely chopped
- 3 garlic cloves, finely chopped
- 1 can chopped tomatoes, about 400 g
- 1 litre (1¾ pints) turkey or chicken stock, preferably home-made
- ¼ tsp ground coriander
- ¼ tsp ground cumin
- ¼ tsp dried oregano
- ½ tsp chilli powder, or to taste
- 200 g (7 oz) courgettes, diced
- 150 g (5½ oz) fresh or frozen sweetcorn, thawed if necessary
- 1 can borlotti or kidney beans, about 400 g, drained and rinsed
- salt and pepper
- 12 flour tortillas to serve (1 packet, about 312 g)
- Avocado salsa
- 2 tbsp fresh lime juice
- 2 avocados
- 100 g (3 1/2 oz) cherry tomatoes, quartered
- 6 spring onions, finely chopped
- 50 g (1 3/4 oz) rocket, chopped
