Turkey Chilli Soup With Salsa

Ingredients

  • 2 tsp extra virgin olive oil
  • 450 g (1 lb) minced turkey
  • 1 onion, finely chopped
  • 2 celery sticks, finely chopped
  • 1 red or yellow pepper, seeded and finely chopped
  • 3 garlic cloves, finely chopped
  • 1 can chopped tomatoes, about 400 g
  • 1 litre (1¾ pints) turkey or chicken stock, preferably home-made
  • ¼ tsp ground coriander
  • ¼ tsp ground cumin
  • ¼ tsp dried oregano
  • ½ tsp chilli powder, or to taste
  • 200 g (7 oz) courgettes, diced
  • 150 g (5½ oz) fresh or frozen sweetcorn, thawed if necessary
  • 1 can borlotti or kidney beans, about 400 g, drained and rinsed
  • salt and pepper
  • 12 flour tortillas to serve (1 packet, about 312 g)
  • Avocado salsa
  • 2 tbsp fresh lime juice
  • 2 avocados
  • 100 g (3 1/2 oz) cherry tomatoes, quartered
  • 6 spring onions, finely chopped
  • 50 g (1 3/4 oz) rocket, chopped
