- 4 nectarines
- 8 radicchio leaves or other red salad leaves
- 3 tbsp toasted pumpkin seeds
- salt and pepper
- Sweet and sour dressing
- 1 tsp grated fresh root ginger
- 1 small garlic clove, very finely chopped
- 1 tbsp sieved apricot jam
- 2 tsp raspberry vinegar or white wine vinegar
- 2 tbsp hazelnut oil
