Sweet-and-sour Duck Salad

Ingredients

  • 1¼ cups (250g) mixed basmati and wild rice
  • 4 small boneless duck breasts (about 500g in total)
  • 2 tsp olive oil
  • 2¼ cups (85g) watercress leaves
  • 1 cup (170g) seedless green grapes, halved
  • 4 spring onions, thinly sliced
  • 3 celery stalks, thinly sliced
  • 4 nectarines
  • 8 radicchio leaves or other red salad leaves
  • ¼ cup (35g) toasted pepitas
  • For the dressing
  • 1 tsp grated fresh ginger
  • 1 small garlic clove, very finely chopped
  • 1 tbsp apricot jam
  • 2 tsp raspberry vinegar or white wine vinegar
  • 2 tbsp hazelnut oil
  • pepper to taste
