Oriental Chicken Farfalle Salad

Ingredients

  • 3 skinless boneless chicken breasts, about 150 g (5½ oz) each
  • 2 lemon or lime slices
  • 1 tbsp rice wine (sake or mirin) or dry sherry
  • 300g (10½ oz) farfalle (pasta bows)
  • 150g (5½ oz) carrots, cut into matchstick strips
  • 1 red pepper, seeded and cut into matchstick strips
  • 2 celery sticks, cut into matchstick strips
  • ½ cucumber, about 200 g (7 oz), halved, seeded and cut into matchstick strips
  • Dressing:
  • 2 tbsp fish sauce
  • 1 tsp caster sugar
  • 1 tbsp rice vinegar, cider vinegar or white wine vinegar
  • 1 tbsp soy sauce
  • 1 small fresh red chilli, seeded and finely chopped
  • 1 large garlic clove, crushed
