Lemon Butter Chicken Pasta

Ingredients

  • Lemon Butter Sauce:
  • 4 tablespoons white wine
  • 5 tablespoons fresh lemon juice
  • 5 tablespoons double cream
  • 225g butter, chilled
  • salt and pepper to taste
  • Chicken and Pasta:
  • 225g dry farfalle (bow tie) pasta
  • 4 skinless, boneless chicken breast fillets, pounded to 5mm thickness
  • 2 tablespoons olive oil
  • 30g butter
  • 4 tablespoons plain flour
  • salt and pepper to taste
  • 115g bacon
  • 175g fresh mushrooms, sliced
  • 175g artichoke hearts, drained and halved
  • 1 dessertspoon capers, drained
  • 4 tablespoons chopped fresh parsley for garnish
