Tunisian Vegetable Couscous

Ingredients

  • 1 tablespoon olive oil
  • 1 red onion, chopped
  • 1 courgette, coarsely chopped
  • 1 yellow summer squash, coarsely chopped
  • 1 carrot, coarsely chopped
  • 1 red pepper, coarsely chopped
  • 1 yellow pepper, coarsely chopped
  • 50g portabellini or crimini mushrooms
  • 1 litre vegetable stock
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1 tablespoon chopped fresh coriander
  • 1 (410g) tin chickpeas, drained
  • 2 plum tomatoes, sliced
  • 350g dry couscous
  • 1 teaspoon grated orange zest
  • 1 tablespoon grated Parmesan cheese
  • 1/2 teaspoon paprika
  • 1 tablespoon finely chopped toasted almonds

Description

A Delicious Summer Dish. It's Satisfying On Its Own, Yet Light Enough To Be Served With Grilled Meats. Couscous Is Cooked With Carrots, Courgette, Yellow Summer Squash, Peppers, Mushrooms And Chickpeas.
