    1 Tbsp chopped fresh cilantro
    1 16oz can chickpeas, drained
    2 Roma tomatoes, sliced
    2 cups dry couscous
    1 tsp grated orange zest
    1 Tbsp grated Parmesan cheese
    1/2 tsp paprika
    1 Tbsp finely chopped toasted almonds
