Ingredients

  • For the filling:
  • 2 large eggs
  • 350g (12 oz) coley, whiting or haddock fillets
  • 400ml (14 fl oz) skimmed milk
  • 1 bay leaf
  • 5 black peppercorns
  • 1 blade of mace
  • 25g (1 oz) butter
  • 1 small leek, finely sliced
  • 2 tablespoons plain flour
  • 1 tablespoon capers, chopped
  • 4 small gherkins, chopped
  • 2 tablespoons chopped parsley
  • 1 tablespoon lemon juice
  • For the topping:
  • 900g (2 lb) floury potatoes, peeled and chopped
  • 85g (3 oz) low-fat cottage cheese
  • 4 tablespoons skimmed milk
  • salt and freshly ground black pepper to taste
  • 55g (2 oz) Cheddar or Lancashire cheese, grated
