Ingredients

  • Marinade:
  • 1/2 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 tablespoon light soy sauce or 1 tablespoon dark soy sauce
  • 1-2 tablespoons cornflour mixed in 1 tablespoon water
  • 350g pork fillet, sliced
  • 1 (150g) bag enoki mushroom, cleaned
  • 2 tablespoon groundnut oil, divided
  • 1/2 tablespoon finely chopped garlic
  • 1 medium onion, sliced
  • Sauce:
  • 2 tablespoons cooking sake (ryorishu)
  • 1 tablespoon caster sugar
  • 4 teaspoons Japanese soy sauce (tamari)
  • 1 tablespoon mirin (sweetened rice wine)
  • 1 tablespoon finely chopped ginger
  • Seasoning:
  • 1 teaspoon finely chopped ginger
  • 4 teaspoon cooking sake (ryorishu)
  • 2 tablespoons Japanese soy sauce (tamari)
  • 1 sheet nori (sushi seaweed sheet), thinly sliced
