- 10 cm (4 in) piece cucumber
- 2 carrots
- 1 red pepper, seeded
- 2 Little Gem lettuces, separated into leaves
- handful of fresh basil leaves, finely shredded
- handful of fresh mint leaves, finely shredded
- 8 spring onions, halved lengthways
- 115 g (4 oz) button mushrooms, thinly sliced
