Ingredients

  • 250g dried cannellini beans, sorted and rinsed
  • 1 onion, chopped
  • 3 tablespoons olive oil
  • 3 cloves garlic, chopped
  • 625g lamb mince
  • 3 carrots, peeled and diced
  • 3 stalks celery, diced
  • 1 1/2 cups tinned tomatoes, with liquid
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon fresh ground black pepper
  • 1/2 teaspoon salt to taste
  • 6 cups (1.5 litres) chicken stock
  • 250g baby spinach leaves
  • 125g feta cheese, crumbled
