- 1 1/2 cups tinned tomatoes, with liquid
- 1/4 cup chopped fresh parsley
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon fresh ground black pepper
- 1/2 teaspoon salt to taste
- 6 cups (1.5 litres) chicken stock
- 250g baby spinach leaves
- 125g feta cheese, crumbled
