  • 1/2 cup shredded carrot (about 1 large carrot)
  • 1/2 cup chopped onion
  • 1 stalk celery, chopped
  • 8 ounces Italian sausage, hot or sweet, or turkey sausage, casings removed
  • 1/2 cup dry red wine
  • 1 14.5-ounce can diced tomatoes, undrained
  • 1 14.5-ounce can Great Northern or Cannellini beans, rinsed and drained
  • 6 ounces bagged fresh baby spinach
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Parmesan cheese
