  • 1 tablespoon light brown sugar
  • 1 tablespoon cornflour, mixed with 1½ tablespoons water
  • 1½ tablespoons vegetable oil
  • 2 carrots, peeled and thinly sliced
  • 2 red capsicums, seeded and thinly sliced
  • 20 snow peas, halved
  • fresh coriander leaves to garnish (optional)
