Tropical Beef And Rice Salad

Ingredients

  • 350g fillet steak, cut into 2cm slices
  • 1â…“ cups (275g) mixed basmati and wild rice
  • 1 papaya, peeled and sliced
  • 6 spring onions, sliced
  • 1¼ cups (50g) mixed salad leaves
  • 1 tbsp sesame seeds, toasted
  • For the marinade
  • ¼ cup (60ml) sherry vinegar
  • 1 large garlic clove, crushed
  • 2 tsp sunflower oil
  • 1 tsp finely chopped fresh ginger
  • grated zest of 1 orange
  • 1 tsp soft brown sugar
  • pepper to taste
  • For the dressing
  • 2 tbsp sunflower oil
  • 2 tbsp orange juice
  • 2 tsp red wine vinegar
  • 1 tsp honey
  • 1 tsp finely chopped fresh ginger
  • 1 large fresh red chilli, deseeded and finely chopped
  • pepper to taste
