Ingredients

  • 2-3 firm, white-fleshed fish fillets (snapper, tilapia, cod, halibut, basa, etc...)
  • 3 cloves garlic, minced
  • 3 Tbsp. light-tasting vegetable oil
  • 2 Tbsp. fish sauce
  • 2 Tbsp. brown sugar
  • 1/2 tsp. white pepper
  • 1/4 tsp. black pepper
  • 1/3 tsp. turmeric
  • 1/2 tsp. chili powder (I used our regular North American type)
  • 1/2 tsp. dried crushed chili OR cayenne pepper
  • FRESH PICKLE: (optional):
  • 1/2 English cucumber
  • handful fresh coriander/cilantro
  • 1/4 cup fresh-squeezed lime juice
  • 2 Tbsp. fish sauce
  • 2 Tbsp. brown sugar
  • 1/4 to 1/2 tsp. dried crushed chili OR cayenne pepper
