  • 1 small bunch Italian parsley, finely chopped
  • 2 medium ripe tomatoes, seeds removed and finely chopped
  • 4 green onions (scallions), thinly sliced
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons freshly squeezed lemon juice

Serves 4 to 6 as a side

Description

Bulgur Wheat Consists Of Wheat Kernels That Have Been Parboiled, Dried And Crushed. It Is A Very Nutritious Whole Grain And Can Be Used In Place Of Couscous Or Rice In Many Dishes.
