  • 1 medium yellow onion, peeled and thinly sliced
  • 1/4 cup extra virgin olive oil
  • 1/2 cup low sodium chicken stock
  • 1/4 cup dry white wine (such as sauvignon blanc)
  • 4 pounds bone-in chicken pieces (thighs, drumsticks and/or breasts)
  • 1 teaspoon dried thyme
