  • 2 medium carrots, roughly chopped
  • 2 garlic cloves, peeled and crushed with the back of a knife
  • 1 1/2 teaspoons cumin
  • 4 cups low-sodium vegetable or chicken stock, or water
  • 1 red bell pepper, stem and seeds removed and roughly chopped
  • 3 cups canned black beans, rinsed well
  • 1/8 teaspoon cayenne (or to taste)
  • Optional toppings:
  • Grated cheddar or Monterey Jack cheese
  • Sour cream
  • Pico de gallo or fresh salsa

Serves 4 as a main
