  • 6 oz. lean bacon, cubed
  • 6 Tbs. balsamic vinegar
  • 1 Tbs. lime juice
  • Sugar
  • Salt and pepper
  • Potato disks:
  • 1 lb. potatoes, peeled and julienne
  • 1 Tbs. balsamic vinegar
  • 3 Tbs. chopped fresh chives
  • 1/2 tsp. salt
  • Freshly ground black pepper
  • 3 Tbs. melted butter
  • 6 5 oz. halibut fillets
  • Salt and pepper
  • 2 Tbs. olive oil
