- 4 cloves of garlic, chopped
- 1 28 oz. can of diced tomatoes with their juice
- 2 C. rice
- 3 C. hot chicken stock
- 3/4 lb. diced smoked ham
- 4 green onions, sliced
- 1/4 C. chopped parsley
- 1/2 lb. de-tailed shrimp
- 1/2 tsp. thyme
- 2 Tbs. Joe's stuff cajun seasoning (or any cajun spice)
- 3 bay leaves
- Salt and pepper to taste
