French Onion Soup With Celeriac

Ingredients

  • 2 Tbs. butter or margarine
  • 2 Tbs. olive oil, plus additional for sprinkling
  • 3 large sweet onions (Vidalia, Mayan, etc.), medium sliced
  • 1 large celeriac (celery root), cut into small cubes
  • 1 large head garlic, coarsely chopped
  • 1 large head garlic, whole
  • 3 C. beef broth
  • 1 C. dry red or white wine (optional)
  • 2 C. vegetable broth
  • 2 tsp. paprika
  • 2 Tbs. parsley
  • Additional paprika and parsley for sprinkling
  • Cajun seasoning to taste
  • Salt and pepper to taste
  • French, sourdough, or ‘English toasting’ bread, thickly sliced
  • 8 Tbs. butter or margarine, softened
  • Swiss, Muenster, or Gruyere cheese, sliced or shredded
