- 10 1/2 oz. chestnut purée (unsweetened)
- 3 eggs
- 1/2 oz. cocoa (for color)
- 3 1/2 oz. plain flour
- 1/2 tsp. baking powder
- Orange Bavarois:
- 2 egg yolks
- 1/3 oz. cornflour or plain flour
- 1 oz. sugar
- grated zest of 1 lg. orange
- 1 C. milk
- 3/4 C. cream
- 1 Tbs. Grand Marnier liqueur
- 1/8 oz. gelatin leaves
- Chestnut Cream:
- 4 3/4 oz. chestnut purée (unsweetened)
- 1 oz. icing sugar
- 3/4 C. cream
- 1 Tbs. vanilla bean paste or seeds from 1 vanilla bean
- raspberry preserves
- 5 oz. fresh raspberries
- unsweetened cocoa, for dusting
