Cuban Sandwiches

Ingredients

  • 6 long sandwich rolls or hoagie rolls, split in half
  • 12 thin slices smoked ham
  • 12-18 thin slices Swiss cheese
  • 12 thin slices kosher dill pickles, sliced lengthwise
  • 1/2 C. mayonnaise
  • 1-2 chipotle chilies in Adobo sauce, processed until smooth
  • Cuban Roast Pork:
  • 1 6-8 lb. pork loin or shoulder, boned
  • 1/2 C. freshly squeezed lime juice
  • 1/2 C. freshly squeezed orange juice or grapefruit juice
  • 1 large green bell pepper, coarsely chopped
  • 1 large onion, coarsely chopped
  • Spice Rub for Pork:
  • 2 Tbs. paprika
  • 1 Tbs. garlic powder
  • 1 Tbs. onion powder
  • 1 Tbs. thyme, dried, crushed
  • 1 Tbs. kosher salt
  • 1 Tbs. freshly ground pepper
  • 1 tsp. ground cumin
  • 1/2 tsp. ground allspice
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. cayenne pepper, ground
