- 1 6-8 lb. pork loin or shoulder, boned
- 1/2 C. freshly squeezed lime juice
- 1/2 C. freshly squeezed orange juice or grapefruit juice
- 1 large green bell pepper, coarsely chopped
- 1 large onion, coarsely chopped
- Spice Rub for Pork:
- 2 Tbs. paprika
- 1 Tbs. garlic powder
- 1 Tbs. onion powder
- 1 Tbs. thyme, dried, crushed
- 1 Tbs. kosher salt
- 1 Tbs. freshly ground pepper
- 1 tsp. ground cumin
- 1/2 tsp. ground allspice
- 1/2 tsp. ground ginger
- 1/2 tsp. ground cinnamon
- 1/2 tsp. cayenne pepper, ground
