Ingredients

  • 1/2 tsp. ground coriander
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground cumin
  • Pinch tsp. ground cardamom
  • Pinch tsp. ground black pepper
  • 1/2 lb. skinless, boneless chicken breast, cut lengthwise into 1/2-inch strips
  • 3 Tbs. canola oil, divided
  • 1 medium onion, chopped
  • 1 yellow bell pepper, seeded and chopped
  • 1 1/3 C. canned fat-free refried kidney or pinto beans
  • 8 8-inch flour tortillas
  • 1 1/3 C. cooked brown rice
  • 4 Tbs. reduced-fat sour cream
  • 1/2 C. (loosely packed) cilantro leaves, roughly cut up
  • 1 C. prepared salsa
