Carrot Cake

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 tsp baking soda
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 1 cup light brown sugar, packed
  • 1 cup granulated sugar
  • 3 sticks (1 1/2 cups) salted butter, softened
  • 3 large eggs
  • 2 tsp vanilla extract
  • 3 cups grated carrot (3 to 4 medium carrots)
  • 1/2 cup crushed pineapple, drained
  • 1 cup chopped walnuts
  • 1 cup raisins
  • Icing:
  • 16 ounces cream cheese, softened
  • 1 stick (1/2 cup) salted butter, softened
  • 1 tbsp fresh lemon juice (about 1 large lemon)
  • 2 tsp vanilla extract
  • 3 cups powdered sugar
