- 1 cup cream
- 1/4 cup vegetable or chicken stock
Clam And Mussel Chowder
- 1 pound small fresh clam, (such as Manilla)
- 1 pound fresh mussel
- 1 garlic, clove
- 1/2 shallot
- 1 sprig thyme
- 1 small bay leaf
- 1/2 cup dry white wine
- 1 cup heavy cream
- 1 tablespoon butter
- salt
- freshly ground white pepper
- lemon, juice
To Serve
- 1/4 cup sliced celery, cut into small dices and blanched
- 1/3 cup Yukon Gold potato, cut into small dices and blanched
- 1/3 cup carrot, cut into 1/4" dice and blanched
