Quick Bouillabaisse

Ingredients

Saffron Mayonnaise

  • 1 egg yolk
  • 1/2 cup chopped, crustless white bread
  • 1 clove garlic
  • 2 pinches saffron
  • pinch paprika
  • 1/2 tablespoon Dijon mustard
  • 1 cup olive oil
  • Coarse salt and freshly cracked black pepper

Bouillabaisse

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1/2 bulb fennel, diced
  • 1 leek, washed and diced
  • 4 cloves garlic, chopped
  • 1 cup dry white wine
  • 4 cups fish stock or water
  • 6 plum tomatoes, chopped
  • 2 bay leaves
  • 1 sprig thyme
  • 4 pinches saffron
  • 16 mussels
  • 16 scallops
  • 16 large shrimp, peeled and deveined with the tails left on
  • 8x2 ounce pieces grouper
  • 2 tablespoons chopped, fresh chervil
  • Coarse salt and freshly cracked black pepper

Assembly

  • 8 slices baguette
