For the Confit Pork

- 1x12 ounce pork belly

For the Braised Pork Belly
- 100 grams pork belly
- 2 cups chicken stock
- 1 sprig thyme
- 1 onion
- 1 clove garlic
- carrot
- Olive oil, salt and pepper
- 1/2 cup white wine
For the Dumplings
- Braised pork, 100 gm
- 1 king oyster mushroom
- 1 piece water chestnut
- 1 tablespoon chopped coriander
- 4 pieces wanton wrapper
- 1 egg yolk
- 4 tablespoons sesame oil
For the Yuzu Dressing
- 3 tablespoons yuzu
- 2 tablespoons olive oil
- 1 tablespoon sesame oil
- 2 tablespoons ponzu
- 1 clove garlic, minced
For the Apricot Chutney
- 3 pieces dried apricot
- 1 tablespoon brandy
- 1/2 cup simple syrup
- Rice wine vinegar
For the Butter Sauce
- Pickled ginger, small handful
- 1 onion
- 1/2 cup rice wine vinegar
- 2 tablespoons red wine vinegar
- 1/2 cup white wine
- 35% cream
- 200 grams butter, cubed
- Salt and pepper
