Pork Belly Two Ways (Ivana's entry)

Ingredients

For the Confit Pork

  • 2 cups duck fat
  • 1x12 ounce pork belly
  • Salt and pepper

For the Braised Pork Belly

  • 100 grams pork belly
  • 2 cups chicken stock
  • 1 sprig thyme
  • 1 onion
  • 1 clove garlic
  • carrot
  • Olive oil, salt and pepper
  • 1/2 cup white wine

For the Dumplings

  • Braised pork, 100 gm
  • 1 king oyster mushroom
  • 1 piece water chestnut
  • 1 tablespoon chopped coriander
  • 4 pieces wanton wrapper
  • 1 egg yolk
  • 4 tablespoons sesame oil

For the Yuzu Dressing

  • 3 tablespoons yuzu
  • 2 tablespoons olive oil
  • 1 tablespoon sesame oil
  • 2 tablespoons ponzu
  • 1 clove garlic, minced

For the Apricot Chutney

  • 3 pieces dried apricot
  • 1 tablespoon brandy
  • 1/2 cup simple syrup
  • Rice wine vinegar

For the Butter Sauce

  • Pickled ginger, small handful
  • 1 onion
  • 1/2 cup rice wine vinegar
  • 2 tablespoons red wine vinegar
  • 1/2 cup white wine
  • 35% cream
  • 200 grams butter, cubed
  • Salt and pepper
