Ingredients

  • 1 1/2 cups of crust free, coarsely chopped white bread chunks – (375ml)
  • 1 cup of packed mint leaves – (250ml)
  • 1/2 cup of packed flat-leaf parsley leaves – (125ml)
  • 1 clove of sliced garlic clove
  • 1 large mild onion, peeled and cut into chunks
  • 2 pickling cucumbers (kirby), peeled, seeded and quartered.
  • 1 small Iceberg lettuce, cut into chunks
  • 1/2 tablespoon of kosher salt – (7.5ml)
  • 1/4 teaspoon of finely ground white pepper – (1.25ml)
  • 3 tablespoons of champagne vinegar – (45ml)
  • 3 tablespoons of grape seed oil – (45ml)
  • 3 tablespoons of olive oil – (45ml)
  • Water to desired thickness
