Lobster Ceviche

Ingredients

Pickled Shallots

  • 2 shallots, thinly sliced into rings using a mandolin
  • 1 teaspoon salt
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon sugar

Crispy Garlic

  • canola oil for frying
  • 1 clove elephant garlic, thinly sliced on a mandolin
  • 1/4 cup whole milk
  • salt

Lobster Ceviche

  • 4 lobster tails, cooked and thinly sliced
  • juice of 1 lemon
  • juice of 1 lime
  • 1/2 English cucumber, thinly sliced
  • 1 orange, segmented
  • 1 grapefruit segmented
  • 1 avocado, thinly sliced
  • Pickled Shallots
  • 1 jalapeno, cut in ½, seeded and thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup basil, leaves picked
  • 1/2 cup cilantro, leaves picked
  • salt
