- 2 tablespoons red wine vinegar
- 1/2 teaspoon sugar
Crispy Garlic
- canola oil for frying
- 1 clove elephant garlic, thinly sliced on a mandolin
- 1/4 cup whole milk
- salt
Lobster Ceviche
- 4 lobster tails, cooked and thinly sliced
- juice of 1 lemon
- juice of 1 lime
- 1/2 English cucumber, thinly sliced
- 1 orange, segmented
- 1 grapefruit segmented
- 1 avocado, thinly sliced
- Pickled Shallots
- 1 jalapeno, cut in ½, seeded and thinly sliced
- 2 tablespoons extra virgin olive oil
- 1/2 cup basil, leaves picked
- 1/2 cup cilantro, leaves picked
- salt
