- 2 tablespoons all purpose flour
- 1/3 cup heavy cream
- 1 tablespoon spicy brown mustard
- 1 teaspoon dry mustard
- 1 tablespoon chopped fresh herbs such as chervil, tarragon, basil, or oregano
- 1/4 teaspoon cayenne pepper
- dash tobasco
- 1 large egg yolk
- 1 1/2 cups fresh crab meat, picked over for shells and cartilage
- 1 teaspoon lemon juice
- 1/4 cup fresh bread crumbs
- salt and freshly ground black pepper
- 1 cup milk (for egg wash)
- 1 large egg (for egg wash)
- 1 cup cracker crumbs or bread crumbs (to coat after egg wash)
- peanut oil for deep frying
- mustard dressing (recipe follows)
Mustard Dressing
- 1/2 cup mayonnaise, preferrably homemade
- 1/4 cup sour cream
- 1/4 cup spicy brown mustard
- 2 tablespoons ketchup
- 1 1/2 teaspoons white wine vinegar
- dash tabasco
- 1 tablespoon pickle relish
- 1 hard-cooked egg, grated
- 2 tablespoons chopped fresh herbs, such as chervil, tarragon, basil, or oregano
