Deviled Crab Cakes with Mustard Dressing

Ingredients

Deviled Crab Cakes

  • 2 teaspoons unsalted butter
  • 2 tablespoons mixed finely chopped red and green bell pepper
  • 1 1/2 teaspoons finely chopped onion
  • 1/8 teaspoon minced garlic
  • 2 tablespoons all purpose flour
  • 1/3 cup heavy cream
  • 1 tablespoon spicy brown mustard
  • 1 teaspoon dry mustard
  • 1 tablespoon chopped fresh herbs such as chervil, tarragon, basil, or oregano
  • 1/4 teaspoon cayenne pepper
  • dash tobasco
  • 1 large egg yolk
  • 1 1/2 cups fresh crab meat, picked over for shells and cartilage
  • 1 teaspoon lemon juice
  • 1/4 cup fresh bread crumbs
  • salt and freshly ground black pepper
  • 1 cup milk (for egg wash)
  • 1 large egg (for egg wash)
  • 1 cup cracker crumbs or bread crumbs (to coat after egg wash)
  • peanut oil for deep frying
  • mustard dressing (recipe follows)

Mustard Dressing

  • 1/2 cup mayonnaise, preferrably homemade
  • 1/4 cup sour cream
  • 1/4 cup spicy brown mustard
  • 2 tablespoons ketchup
  • 1 1/2 teaspoons white wine vinegar
  • dash tabasco
  • 1 tablespoon pickle relish
  • 1 hard-cooked egg, grated
  • 2 tablespoons chopped fresh herbs, such as chervil, tarragon, basil, or oregano
