- 1 1/2 tablespoons of crushed lightly pink peppercorns â (22.5ml)
- 1 1/2 tablespoons of crushed lightly green peppercorn â (22.5ml)
- 1 1/2 tablespoons of soften unsalted butter â (22.5ml)
- 1 tablespoon of all-purpose flour â (15ml)
- 1/2 tablespoon of firmly packed brown sugar â (7.5ml)
- 1/2 tablespoon of Dijon mustard â (7.5ml)
- 3/4 teaspoon of salt - (3.75ml)
Sauce
- 1 1/2 cups of Merlot â (375ml)
- 1 cup of beef demi glace - (250ml)
- 2 tablespoons of red-current jelly â (30ml)
- 3/4 teaspoon of drained bottled horseradish â (3.75ml)
- 3 tablespoons of chopped fresh flat-leafed parsley leaves â (45ml)
