- 1 small chorizo sausage, chopped
- 3 ribs celery, chopped
- Grated zest of 1 lemon
- Juice of 1 lemon
- 1/2 cup dry white wine (125 ml)
- 4 cups fish stock or clam juice (1 litre)
- Several threads good quality saffron, steeped in stock before adding
- 1 small can chopped Italian tomatoes (14-ounce/398 ml)
- 1 pound mussels, bearded and washed (454 g)
- 1/2 bunch fresh Italian parsley, chopped
