Ingredients

Soupe au Pistou

  • 1 1/4 cups dried white beans, such as, cannellini, navy, or, flageolet
  • 1 tablespoon extra virgin olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 stalk celery, thinly, sliced
  • 6 carrot, diced
  • 1/2 teaspoon each sea salt and pepper
  • 6 cups water
  • 5 cups chicken, or, vegetable, stock
  • 1 each Bay Leaf, and, sprig, fresh thyme
  • 4 small red potato, cubed
  • 1 small bulb fennel, trimmed, cored, and, cubed
  • 3 plum tomato, peeled, seeded, and, diced
  • 1 zucchini, diced
  • 4 ounces haricots verts, or, thin, green, beans
  • 2 cups shelled fresh or frozen peas
  • 3/4 cup broken vermicelli

Pistou

  • 1 1/2 cups lightly packed fresh basil, leaves
  • 1 cup grated Parmigiano-Reggiano cheese
  • 1/4 cup extra virgin olive oil
  • 4 large cloves garlic, minced
