Ingredients

Braised Bison Short Rib Gravy

  • 2 pounds bison short ribs, cut between ribs to separate
  • 2 tablespoons olive oil
  • 1 medium carrot, peeled and chopped
  • 1 medium white onion, peeled and chopped
  • 2 celery stalks, diced
  • 4 garlic cloves, chopped
  • 2 sprigs thyme
  • 2 sprigs rosemary
  • 1 cup red wine
  • 4 cups beef stock
  • Salt and freshly ground black pepper

Thyme Butter Basted Bison Rib Eye Steaks

  • 6x8 ounce bison rib eye steaks
  • 2 tablespoons olive oil
  • 4 sprigs thyme
  • 4 tablespoons butter
  • Salt and pepper

Bourguignon Trimmings

  • 2 tablespoons olive oil
  • 2 cups new potatoes, cut into 1/2 inch coins
  • 2 tablespoons butter
  • 2 sheets of bison jerky, cut into thin strips
  • 1/2 cup pearl onions, peeled
  • 2 cups button mushrooms, quartered
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons chopped parsley
  • 2 bunches asparagus, peeled
  • Salt and freshly ground black pepper
