Ingredients

For Pork Rillette

  • 1 carrot, small, quartered
  • 4 garlic cloves, smashed
  • 1 onion, small, quartered
  • 1 sprig fresh thyme
  • 3 sage leaves
  • 2 bay leaves
  • 10 black peppercorns
  • 1x12 ounce pork belly

For Gelee

  • see pork rillette

For Maple Apricot Brandy Chutney

  • 1 cup apricots, dried, diced small
  • 1/2 cup brandy, any, decent quality
  • 1/4 cup maple syrup (or good quality dark brown sugar)
  • 1-2 tbsp rice vinegar
