Ingredients
Chickpea Patties
- 1 1/2 cups chickpea (garbanzo bean) flour
- 1/2 tablespoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne
- 2 1/2 cups water
- 1/4 cup flat leaf parsley, chopped
Lemon Aioli
- 5 cloves garlic
- 1/2 tablespoon Dijon mustard
- Zest and juice of 1 lemon
- 3 egg yolks
- 1 1/2 cups light olive oil (I use a canola/extra virgin olive blend)
Slaw
- 1 pound carrots, peeled and grated (about 3 cups)
- 6 radishes, tops removed and sliced
- 1 1/2 tablespoons rice wine vinegar
- 1 1/2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Garnish
- 6 ounces mixed salad greens (about 1 quart lightly packed)
- 1 roasted delicata squash, cut in ¼-inch slices, warm (or butternut squash, peeled & cut into rounds)
- 6 ciabatta rolls
