Chickpea Sandwich

Ingredients

Chickpea Patties

  • 1 1/2 cups chickpea (garbanzo bean) flour
  • 1/2 tablespoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne
  • 2 1/2 cups water
  • 1/4 cup flat leaf parsley, chopped

Lemon Aioli

  • 5 cloves garlic
  • 1/2 tablespoon Dijon mustard
  • Zest and juice of 1 lemon
  • 3 egg yolks
  • 1 1/2 cups light olive oil (I use a canola/extra virgin olive blend)

Slaw

  • 1 pound carrots, peeled and grated (about 3 cups)
  • 6 radishes, tops removed and sliced
  • 1 1/2 tablespoons rice wine vinegar
  • 1 1/2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Garnish

  • 6 ounces mixed salad greens (about 1 quart lightly packed)
  • 1 roasted delicata squash, cut in ¼-inch slices, warm (or butternut squash, peeled & cut into rounds)
  • 6 ciabatta rolls
