Quesadillas with Avocado and Tomato Salsa

Ingredients

Avocado and Tomato Salsa

  • 4 plum tomatoes, chopped
  • 1/2 small red onion, minced
  • 1 jalapeno chile, seeded and minced
  • 2 tablespoons lime juice
  • 1/4 cup chopped fresh coriander
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 1 ripe avocado, peeled and diced
  • Coarse salt and freshly cracked black pepper to taste

Quesadillas

  • 2 tablespoons olive oil
  • 2 cups thinly sliced mixed mushrooms
  • 5 green onions, sliced thinly
  • 1 finger chile, sliced thinly
  • 1/2 small red onion, peeled, halved, and sliced thinly
  • 1 yellow pepper, cored, seeded, stem removed and sliced thinly
  • 2 cloves garlic, chopped
  • Coarse salt and freshly cracked black pepper to taste
  • 2 cups grated manchego cheese
  • 2 cups grated Monterey Jack cheese
  • 10 medium flour tortillas

Assembly

  • 1/2 cup sour cream
  • 1 tablespoon chopped chives
