- 1 ripe avocado, peeled and diced
- Coarse salt and freshly cracked black pepper to taste
Quesadillas
- 2 tablespoons olive oil
- 2 cups thinly sliced mixed mushrooms
- 5 green onions, sliced thinly
- 1 finger chile, sliced thinly
- 1/2 small red onion, peeled, halved, and sliced thinly
- 1 yellow pepper, cored, seeded, stem removed and sliced thinly
- 2 cloves garlic, chopped
- Coarse salt and freshly cracked black pepper to taste
- 2 cups grated manchego cheese
- 2 cups grated Monterey Jack cheese
- 10 medium flour tortillas
Assembly
- 1/2 cup sour cream
- 1 tablespoon chopped chives
