Salt Cod Fritters

  • 1 pound boneless dried salt cod (454 grams)
  • 1 pound potatoes (454 grams)
  • 1 bay leaf
  • 2 cloves of garlic minced
  • 4 tablespoons butter (60 ml)
  • 1/2 cup all purpose flour (125 ml)
  • 4 eggs
  • handful chopped Italian parsley
  • Salt and black pepper
  • pinch cayenne
  • Olive oil, for frying

Sauce Remoulade

  • 4 egg yolks
  • Salt, to taste
  • 1 tablespoon Dijon mustard (15 ml)
  • 3 1/3 cups safflower oil (850 ml)
  • 2 tablespoons white wine vinegar (30 ml)
  • White ground pepper, to taste
  • Juice of ½ lemon
  • 3 tablespoons chopped cornichons, chopped (small dill pickles) (45 ml)
  • 1 tablespoon chopped capers (15 ml)
  • 1 to 2 anchovies, chopped
  • 1 shallot, finely diced
  • Italian parsley, chopped

Cucumber Relish

  • 2 medium cucumbers
  • 3/4 tablespoon salt (11 ml)
  • 1/4 teaspoon black pepper (1 ml)
  • 1 teaspoon minced garlic (5 ml)
  • 1 1/2 ounces white sugar (42 grams)
  • 3 fluid ounces white vinegar (90 ml)
