Salt Cod Fritters
- 1 pound boneless dried salt cod (454 grams)
- 1 pound potatoes (454 grams)
- 1 bay leaf
- 2 cloves of garlic minced
- 4 tablespoons butter (60 ml)
- 1/2 cup all purpose flour (125 ml)
- 4 eggs
- handful chopped Italian parsley
- Salt and black pepper
- pinch cayenne
- Olive oil, for frying
Sauce Remoulade
- 4 egg yolks
- Salt, to taste
- 1 tablespoon Dijon mustard (15 ml)
- 3 1/3 cups safflower oil (850 ml)
- 2 tablespoons white wine vinegar (30 ml)
- White ground pepper, to taste
- Juice of ½ lemon
- 3 tablespoons chopped cornichons, chopped (small dill pickles) (45 ml)
- 1 tablespoon chopped capers (15 ml)
- 1 to 2 anchovies, chopped
- 1 shallot, finely diced
- Italian parsley, chopped
Cucumber Relish
- 2 medium cucumbers
- 3/4 tablespoon salt (11 ml)
- 1/4 teaspoon black pepper (1 ml)
- 1 teaspoon minced garlic (5 ml)
- 1 1/2 ounces white sugar (42 grams)
- 3 fluid ounces white vinegar (90 ml)
