  • 2 cloves of Garlic, chopped very fine
  • 10 grams Fresh Rosemary, chopped very fine
  • 15 grams Japanese Ginger, chopped very fine
  • 100 millilitres Soya Sauce
  • 80 millilitres Sherry
  • 5 millilitres Sesame Oil
  • 30 millilitres Honey
  • 30 millilitres Oil
  • Salt and Pepper

White Balsamic Vinaigrette

  • 1 clove garlic, chopped fine
  • 1 Shallot, peeled chopped fine
  • 30 millilitres White Balsamic Vinegar
  • 10 millilitres Dijon Mustard
  • Salt and Cayenne pepper to taste
  • 80 millilitres Extra Virgin Olive Oil
  • 5 grams Chives, chopped
  • 5 grams Fresh Thyme, chopped

Heirloom Tomato Salad

  • 454 grams Wedged Heirloom Tomatoes Selection
  • 5 grams Dill, chopped
  • 60 grams Micro Greens (such as pak choi and daikon radish)

Turmeric Onion Rings

  • 150 grams Onion, very thinly sliced into rings
  • 200 grams Flour, plain
  • 25 grams Turmeric
  • 5 grams Sea Salt
  • 150 millilitres of milk
