Halibut with Yellow Corn Grits and Red Wine-Corn Sauce

Ingredients

For the Red Wine-Corn Sauce

  • 1 cup sweet corn kernels
  • 2 tablespoons minced shallot
  • 1 tablespoon extra virgin olive oil
  • 1 cup Red Wine Reduction
  • 1/2 teaspoon white wine vinegar
  • Salt and freshly ground black pepper

For the Grits

  • 3 tablespoons minced shallot
  • 1 clove garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 2 cups sweet corn kernels
  • 1 tablespoon butter
  • 2 cups cooked yellow corn grits, warm
  • Salt and freshly ground black pepper

For the Mushrooms

  • 2 tablespoons butter
  • 1 tablespoon minced shallot
  • 2 cups black trumpet mushrooms, cleaned
  • 1 teaspoon balsamic vinegar
  • 1/4 cup chicken Stock
  • Salt and freshly ground black pepper

For the Halibut

  • 1 tablespoon grapeseed oil
  • 4x3 ounce halibut pieces
  • Salt and freshly ground black pepper

For Assembly

  • 4 teaspoons extra virgin olive oil
  • 4 teaspoons chopped fresh chervil
  • Freshly ground black pepper
