Ingredients

  • Salt and pepper

Wet Rub

  • 2 tablespoons honey (25 mL)
  • 2 tablespoons vegetable oil (25 mL)
  • 1 tablespoon Dijon mustard (15 mL)
  • 1/2 small onion, chopped
  • 1 clove garlic, chopped
  • 1 1/2 teaspoons lemon zest (7 mL)
  • 1/2 teaspoon salt (2 mL)
  • 1/4 teaspoon pepper (1 mL)
  • 1/4 cup assorted chopped herbs (such as rosemary, mint, sage) (50 mL)

Mint Pesto

  • 1/2 cup fresh mint leaves, loosely packed (125 mL)
  • 1/2 cup pine nuts, toasted (125 mL)
  • 2 tablespoons olive oil (25 mL)
  • 1/2 teaspoon salt (2 mL)
  • 1/4 teaspoon pepper (1 mL)
