Smoked chicken & wild rice salad

Ingredients

  • 1 1/2 cups (300g) jasmine and wild rice blend
  • 1/3 cup (80ml) mirin
  • 2 tbs rice vinegar
  • 1 tbs tamari or soy sauce
  • 1/4 tsp sesame oil
  • 1 tbs lime juice
  • 1 small red chilli, seeded, fi nely chopped
  • 1 telegraph cucumber, halved, sliced on the diagonal
  • 2 (about 380g) smoked chicken breast fillets, finely shredded
  • 1/4 cup chopped mint, plus extra leaves to garnish
  • 1/4 cup chopped coriander, plus extra leaves to garnish
  • 1 small red onion, very thinly sliced
  • 1/2 cup chopped roasted peanuts
  • Sweet chilli sauce and lettuce leaves (optional), to serve
