Split pea and rice meatballs (Koofteh berenji)

Ingredients

  • 1/4 cup (60g) yellow split peas
  • 1/2 cup (100g) basmati rice
  • 1 brown onion, coarsely grated
  • 1/3 cup (50g) besan (chickpea flour) (see note)
  • 400g beef or lamb mince
  • 1 egg, lightly whisked
  • 1/4 cup finely chopped flat leaf parsley
  • 4 green onions, finely chopped
  • 2 tbs finely chopped dill
  • 2 tbs finely chopped tarragon
  • 2 tbs finely chopped mint
  • 2 tsp ground turmeric
  • 2 tbs currants
  • 1/4 cup (30g) finely chopped walnuts
  • 40g butter
  • 1 1/2 cups (375ml) chicken stock
  • 1/4 cup (60ml) lemon juice
  • 1 tbs tomato paste
  • 1/2 cup (125g) Greek-style yoghurt
