Ingredients

  • 4 leaves (20g) leaf gelatine*
  • 700ml tomato juice
  • 150ml vodka
  • 1 lemon, juiced
  • 1 tbs Worcestershire sauce
  • 1 tsp Tabasco sauce
  • Smoked salmon brandade

  • 450g pontiac or desiree potatoes, peeled, diced
  • 90ml extra virgin olive oil
  • 2 tbs salted capers*, rinsed
  • 2 garlic cloves, crushed
  • 6 shallots (spring onions), roughly chopped
  • 200g smoked salmon (off-cuts are fine)
  • 2 tbs chopped fresh dill
  • 2 tbs creme fraiche
  • 40ml (2 tbs) lemon juice
  • 1 baguette, sliced, toasted
