  • 8 slices serrano ham or prosciutto, halved widthwise
  • 150g Manchego (see note) or mozzarella, coarsely grated
  • 1/2 cup large spearmint leaves
  • 4 x 60g long rashers bacon, rind removed, halved widthwise
  • 2 tablespoons olive oil
  • Sofrito

  • 60ml (1/4 cup) olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, thinly sliced widthwise
  • 1/4 teaspoon pimenton (smoked Spanish paprika)
  • 500g cherry tomatoes, halved
  • 150ml fino sherry (see note)
