Ocean trout, cucumber & lemon mayonnaise
- 3 Lebanese cucumbers, peeled, thinly sliced lengthways avoiding seed core
- Finely grated rind and juice of 1/2 lemon
- 4 x 180g ocean trout fillets, skinned, pin-boned
