  • 1/2 vanilla bean, split
  • 1 tsp ground ginger
  • Pinch of cloves
  • 1/2 cup caster sugar
  • 2 tbs lemon juice
  • Butterscotch sauce

  • 200g brown sugar
  • 1/2 cup thick cream
  • 100g unsalted butter
  • 1 tsp vanilla extract
