Congee with pickled gai choy and salted egg

Ingredients

  • 4 baby or 1 large gai choy, washed, outer leaves trimmed
  • 1 tbs yellow mustard seeds
  • 1 cup (250ml) rice wine vinegar
  • 1 cup (250ml) shaoxing wine
  • 1/4 cup (55g) caster sugar
  • 1/4 cup (40g) sea salt
  • 1/4 tsp crushed white peppercorns
  • 1/2 tsp Sichuan peppercorns, crushed
  • 1 whole star anise
  • 3/4 cup (185ml) water
  • 10g ginger, shredded
  • 3 cups (750ml) water, extra
  • 1/2 cup (100g) long grain rice
  • 4 salted duck eggs (see notes)
  • 2 green onions, thinly sliced widthways
  • 2 long fresh red chillies, thinly sliced
  • 1/4 cup (25g) rousong, optional (see notes)
  • Soy sauce, to serve
