Yoghurt dressing
- 200g (3/4 cup) plain soy yoghurt
- 2 garlic cloves, crushed
- 3 tsp finely chopped fresh dill
- 3 tsp finely chopped fresh chives
- 3 tsp finely chopped fresh coriander
- 2 tbs fresh lemon juice
- 1 tbs extra virgin olive oil
- 1/2 tsp Dijon mustard
- Salt & freshly ground black pepper
Zucchini salad
- 2 green zucchini, ends trimmed, cut into 1cm pieces
- 1/2 red onion, finely chopped
- 2 vine-ripened tomatoes, halved, deseeded, cut into 1cm pieces
- 1 Lebanese cucumber, peeled, seeded cut into 1cm pieces
- 2 tbs finely chopped fresh mint
- 2 tbs finely chopped fresh continental parsley
- 1 tbs olive oil
- 1 tbs fresh lemon juice
- Salt & freshly ground black pepper
